Roasted red snapper barley risotto
With our own HOME grown bok choi


  • 12 ounces of red snapper
  • 5 ounces of barley
  • 2 tbs extra virgin olive oil
  • garlic to taste
  • diced fresh tomato
  • 1 head bok choi


  • Heat the olive oil and crushed garlic in a saucepan
  • Add snapper fillet and reduce with a touch of white wine
  • Add diced tomatoes
  • Cook for 8 mins(not too much or the fish will become dry) if you need to, add some fish stock.

Barley Risotto Recipe:

  • Heat 1 tbs of olive oil
  • Chop 1 shallot
  • Add barley and cover with some vegetable stock
  • Cook for about 20 mins

Bok Choi Recipe:

  • Blanche the bok choi for 3 minutes
  • Pat dry
  • Heat olive oil and garlic in a saucepan and add the blanched bok choi
  • Sauté for couple of mins
